Black Beans

Corn

Tomato Sauce
1 cup
Cheddar Cheese
1/2 cup, shredded
Cumin
1 tsp
Salt
to taste
Pepper
to taste
Preparation
Preheat oven to 375°F (190°C).
Mix cooked quinoa, black beans, corn, tomato sauce, cumin, salt, and pepper.
Stuff bell pepper halves with the mixture and place in a baking dish.
Top with shredded cheddar cheese.
Bake for 25-30 minutes or until peppers are tender.
