Stuffed Bell Peppers

Ingredients

  • Bell Peppers4, halved and seeded
  • Quinoa1 cup, cooked
  • Black Beans1 cup, cooked
  • Corn1 cup
  • Tomato Sauce1 cup
  • Cheddar Cheese1/2 cup, shredded
  • Cumin1 tsp
  • Saltto taste
  • Pepperto taste

Preparation

  1. Preheat oven to 375°F (190°C).
  2. Mix cooked quinoa, black beans, corn, tomato sauce, cumin, salt, and pepper.
  3. Stuff bell pepper halves with the mixture and place in a baking dish.
  4. Top with shredded cheddar cheese.
  5. Bake for 25-30 minutes or until peppers are tender.
