Ingredients

  • Quinoa1 cup
  • Cucumber1/2, diced
  • Cherry Tomatoes1 cup, halved
  • Red Onion1/4, diced
  • Feta Cheese1/4 cup, crumbled
  • Lemon Juice2 tbsp
  • Olive Oil2 tbsp
  • Saltto taste
  • Pepperto taste

Preparation

  1. Cook quinoa according to package instructions and let it cool.
  2. In a large bowl, combine quinoa, cucumber, cherry tomatoes, red onion, and feta cheese.
  3. Drizzle with lemon juice and olive oil.
  4. Season with salt and pepper to taste.
