Preparation
Heat olive oil in a pot over medium heat.
Sauté onion and garlic until softened.
Add mushrooms and cook until tender.
Stir in Arborio rice and cook for 1-2 minutes.
Gradually add vegetable broth, stirring constantly until absorbed and rice is creamy.
Stir in grated Parmesan cheese. Season with salt and pepper.
