Mushroom Risotto

Ingredients

  • Arborio Rice1 cup
  • Mushrooms2 cups, sliced
  • Vegetable Broth4 cups
  • Onion1, diced
  • Garlic2 cloves, minced
  • Olive Oil2 tbsp
  • Parmesan Cheese1/2 cup, grated
  • Saltto taste
  • Pepperto taste

Preparation

  1. Heat olive oil in a pot over medium heat.
  2. Sauté onion and garlic until softened.
  3. Add mushrooms and cook until tender.
  4. Stir in Arborio rice and cook for 1-2 minutes.
  5. Gradually add vegetable broth, stirring constantly until absorbed and rice is creamy.
  6. Stir in grated Parmesan cheese. Season with salt and pepper.
