Lentil Soup

Ingredients

  • Lentils1 cup
  • Carrots2, diced
  • Celery2 stalks, diced
  • Onion1, diced
  • Garlic2 cloves, minced
  • Vegetable Broth4 cups
  • Olive Oil1 tbsp
  • Saltto taste
  • Pepperto taste

Preparation

  1. Heat olive oil in a pot over medium heat.
  2. Sauté onion, garlic, carrots, and celery until softened.
  3. Add lentils and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer until lentils are tender. Season with salt and pepper.
